Beets are a good fuel source of carbohydrates that don’t leave you lagging like processed foods. They satisfy hunger, aid in weight loss and boost your energy levels. Beets are high in folate, fiber, iron, manganese, potassium and vitamin C, PLUS naturally fat-free, low in calories, inexpensive and available year-round.
Beets can be sautéed on low heat, grated raw, boiled, roasted or steamed. Added to soups, salads or entrees – you will not regret adding this often overlooked Super Food to your daily food intake.
I like to eat them raw, try this recipe, its super delicious!
Apple Beet Salad
- 4-6 raw beets, peeled and cut into matchsticks
- 2 granny smith apples
- Arugula or mixed salad greens
- 6 tablespoons fresh lemon juice
- 3 tablespoons olive oil
- 8 oz organic goat cheese, crumbled
- Raw walnuts
- sea salt to taste
Wash, peel and cut your beets and apples. Place them in a large bowl. Add the olive oil & lemon juice mix it all together. Plate individually by making a bed of salad greens, top with pile of beet mixture, and garnish with cheese and walnuts.
